Merry CHRISTmas!

Of course... they've not been mailed. And, true to my own personal habit... they'll be late. BUT, they ARE ready to be dropped off at the Post Office tomorrow!

May we all remember the reason for the season, and be a bit kinder to each other.

What's Cooking - 12/3 Edition

I've GOT to get back on track with planning out our menu's and publishing them to my blog. I am WAY more apt to follow a meal plan if it's public. Weird... but it works.

This week's Bountiful Basket was packed full of great foods. I am excited about the foods I've planned to cook (which is kind of important if I'm going to actually make them!)

Here's a photo of what we got in our basket this week:

We received broccoli, a bunch of radishes, a handful of cucumbers, a pineapple, lots of persimmons, tomatoes, oranges, onions, several green bell peppers, butter lettuce, blackberries, apples, and pears.

Here's what I'm planning to serve this week:

~ Meatloaf, baked potatoes, and sauteed cabbage
~ Broccoli and chicken with brown rice
~ Pear, cucumber, radish, persimmon, pineapple with mixed green salad. Served with broiled salmon.
~ Brown rice and quinoa stuffed green peppers. Served with steamed broccoli
~ Enchiladas made with a sauce that will include the tomatoes and onions.
~ Two nights leftovers somewhere along the line.

I'm also going to bake a few loaves of pumpkin banana bread, honey whole wheat multi grain bread and one batch of chocolate peanut butter rice krispie rolls. I want to have at least one lunch of marinated cucumber salad. However, we're expecting some yucky weather this week. So, I expect to eat some belly filling food like beans and rice! HEAVENLY!
