Our Dinner Menu - Week of July 27th

WOW! So many questions were emailed to me this week about our 'menu schedule'. I'm pretty sure it's loads easier to just leave a comment - but I'm not going to knock the interaction either way! Here are the answers to the most commonly asked questions:

Q. How do you store your "freezer meals"? How long do they keep for? How do you heat/reheat/serve them?

A. One of the greatest investments we've made so far is our Food Saver. You can find them at Wal-Mart, Target, and I'm sure at many other super shopping centers. Before I load food into the bags, I label them with what I'm putting in and the date. I know that there's lots of talk for how long things will last in the freezer - but I haven't paid much attention, and haven't had any problems... yet. My personal rule is that if it's rock hard when it comes out and it looks good in the package (prior to thawing it), why not eat it? On average, I would say that our meals hang out in the freezer for 0-6 months. Roasts and ham bones for much longer. As far as thawing them, I usually put them into the fridge the morning of (as i'm getting ready to leave for work). Reheating varies. Frozen mashed potatoes do not reheat well in the microwave. But, they do in a saucepan on top of the stove over low heat. Rice reheats awesomely in the microwave. Spaghetti sauce and meatballs also do well in the microwave - but they also do very well stovetop.

Q. Will you share the recipes?

A. I will try and work on loading them to my recipe blog. You never know what you'll find over there. :)

Q. What do you do when guests come over? What will you do if we all show up?

A. We have a big group over EVERY Sunday. Steve's brother Thomas comes with his girlfriend, Sarah, and whomever they find who needs to eat a "good homecooked meal". Sometimes we invite some of our friends and their children to come too. Sometimes Steve's sister, Kim, comes too. Growing up, I learned to cook for a large group (rather, there were always lots of mouths to feed). So, it's difficult for me to cook for two people. We definitely have days of leftovers. We also have days where we just can't eat leftovers for another meal. Thus the beauty of the Food Saver! As far as people showing up out of the blue - bring it! That means YOU, Julie B. with no blog! :)

Q. With the cost of living going up, how do you afford all of the groceries you need?

Onto this week's Menu... We were pretty successful last week. At least one night fell through, bu that's my fault.

Sunday - Beef Taco's & Corn Chile Chowder (at least three dinners into the freezer!)
Monday - Chicken Tikka Masala (from the freezer), sticky white rice & indian flat bread (naan)
Tuesday - Grilled pork chops (freezer), steamed vegi's, seasoned rice
Wednesday - Ravioli (freezer) w/ tomato sauce
Thursday - Swiss steak w/ egg noodles (3 freezer meals accomplished!)
Friday - Mini Pizzas! YUMMY!
Saturday - Breakfast - Breakfast casserole. Dinner - Meatloaf (freezer), baked potatos, honey wheat bread

5 Days...

Yep, it's almost here. The 4th book in Stephanie Meyer's Twilight series will be released to the world at midnight Saturday morning (really though, it's still Friday night - at least in my mind). I can't wait to have the book - and hopefully have the time to read it on Saturday.

For those of you wh0, like me, are Twilight Addicts, MTV has released an entertaining quiz. Check it out: http://moviesblog.mtv.com/2008/07/22/how-well-do-you-know-twilight-take-our-quiz/. I enjoyed it and was suprised that I actually knew all of the answers. Perhaps that's really dorky of me - but oh well.
I can remember when my friends began clamoring over the first book in her series, and how they kept telling me I needed to read them as the series grew. I put them off because... well really... it's a vampire book. I'm not the 'kind of girl' who is normally into vampires (though Brad Pitt was pretty dang hot!), and the thought of reading a stack of books about a vampire romance just wasn't something I wanted to put onto my priority list. Then, last year as my Bella friends started to talk about the books - and they're really some of the coolest people I know - I finally bit the bullet and read all of them. In.one.weekend.
Since then, I've read them at least half a dozen times. Crazy I know. But I do enjoy them.
I'm so hoping that the bean waits to arrive until after December 12th. That's the night Twilight the movie is released. I know it's nuts to think about planning one's child birth around a movie (AND... have it be about VAMPIRES), but I can't help it! :)

Converting to Mac...

I've been wanting a laptop of my own for quite a while. Friday night I played with my very own cute little Mac laptop. It's so dainty and thin compared to the other laptop we have here at home - I'm worried that I'll drop and break it! I suppose that's great practice for our [hopefully] dainty baby.

Converting to a Mac from a PC is not easy. Heather taught me a few things and gave me a quick run down. I know that the Apple store has free classes (and I'm hoping to take them) but I am normally an immediate solution kind of girl. Waiting for classes is not my idea of immediate solution. Know what I mean.

I know some of you have gone through the same thing. Will you please share your tips for converting to a Mac from a PC? Please?

Schedules...

Lately, one of my big goals is to have a 'regular' schedule. From my time at work, to time spent working out, to our home meal schedules, budget schedules, cleaning schedules, church schedules - so many different schedules! I've had a really hard time balancing all of the various schedules and getting my highest priorities squared away before the not-s0-high priorities take over my time.

One of the things a friend recommended to me was setting a food menu at the beginning of the week, so that we have a schedule to follow for our meals all week long. Generally, we do pretty well at sticking to the schedule and not breaking it by eating out (talk about a budget buster!). One of the things I think will help keep me on our meal schedule is posting here - something about accountability. So... here's our meal schedule for the week!

Sunday - Swiss steak with egg noodles and wheat bread. Coconut creme pie for dessert.
Monday - Beef brisket & hash brown casserole (will add 2 freezer meals to our stash!)
Tuesday - Steak, baked potatoes, green salad.
Wednesday - Sandwiches (one of my all-time favorite meals lately!!)
Thursday - Jambalaya (will add 4-6 freezer meals to our stash!)
Friday - Chicken & cheese ravioli with tomato sauce and homemade Beste bread.
Saturday - Breakfast fritatta (sausage, potato and spinach) & Kung pao chicken with steamed rice. (the chicken is for dinner)

Hopefully, with this down and publically out there, we'll do even better at following it. Slowly, I'm getting life back together one schedule at a time.

Summer Greek Pasta Dinner Salad

Tonights dinner was a cool summer salad loaded with fresh vegetables, rotisserie chicken, roasted pine nuts, and penne pasta. I wasn't sure how it was going to go over for dinner. I was pleasantly surprised when they asked me to make sure we have it again. With the Texas summer heat I wanted something that wouldn't heat up the house, would keep well, and could be prepared in the morning and served at night. This salad did all of that, and was also nutritious, fast and healthy too. Enjoy!

Ingredients:

1 box penne pasta
1 rotisserie chicken, cooled and shredded*
1 red onion, finely diced
1 bag of spinach leaves
1 lb. of fresh asparagus, steamed
2 lbs. grape tomatoes (we like tomatoes!), sliced in half
1 pkg. crumbled feta cheese
8 oz. kalamata olives, drained and sliced in half
1/2 c. pine nuts, toasted
Olive Oil
Greek Seasoning (I use the kind in the spice section at Wal-mart)


Directions:

Cook the pasta in boiling water. Be sure to season your water with 2T. of olive oil and 1t. of salt. It really does improve the pasta flavor, and helps the pasta to not stick together when you're done. Drain well. Put the pasta into a large bowl and cool.

Add all of the other ingredients in with the pasta. Add 1-2 tablespoons of olive oil just to lightly coat the pasta (or to taste). Add 2 teaspoons of greek seasoning to the bowl of ingredients and toss it together. You can eat it right away, or let it sit in the fridge for a few hours and allow the flavors to blend together.

Serve and enjoy!

Notes:

If you're going to use a rotisserie chicken, don't throw out those bones! Boil them for a wonderful and healthy stock! It's really easy - just put the bones into a pot and add enough water to cover them up. Cook the bones on low for a few hours (I usually put them on after dinner and let them cook all night long). Strain the liquid from the bones and let it cool. I then put the liquid into food saver bags and freeze them so that they're available for another day. I love using this broth when I cook Jambalaya, or anything else where the water is going to be absorbed by food. Talk about an easy way to add flavor and nutrition!

Color Me Excited!

I can't wait to go and see Mama Mia the movie! The previews have me dancing in my seat EVERY time! It looks like such a great fun movie, and with the incredible cast lined up it has to be good. Of course, I'd go see any movie with Colin Firth in it - even if it was a super rotten tomato. Pierce Brosnan? Meryl Streep? Seriously talk about great!

It's a shame that my girlie friends here are totally not into watching it - it looks like I'm going to fly down and see it with my Mom. That's not a bad thing! It would be great to have another visit with my parents, my brother & sister, and the kids. Of course, the yummy food wouldn't be a huge set back. NOT! :)

I'm jamming away to my ABBA Gold CD. Something tells me that the Mamma Mia Soundtrack will shortly be added to my collection. :)

What I Love About You: Lots and Lots and Lots

It's been a long time since I've updated this list - but there continues to be many, many reasons why I love you.

I love that you continue to put away the clean dishes even if you constantly put them in places they don't belong. And if you put them in strange high places to get a rise out of me.

I love that you continue to think about our future, and what we can do to secure our finances now.

I love that you are excited about our Baby Bean. I love knowing that you are going to be an incredible Daddy!

I love that you are willing to cook dinner for us both when I'm working late.

I love that you led me to believe that you had sold your XBOX 360 because you thought you wasted too much time playing it instead of doing things you thought were more pressing. (and I am SOOOO glad you didn't sell it - I was so upset with you!) We all spend time on things we want to do instead of things that need to be done. But, the fact that you made a decision to set it aside so that you could focus on things you thought were more important or adult is quite impressive!

I love that you continue to love me, despite my faults, my shortcomings, and my lack of energy!

Sparkly Fun

So much sparkly fun has been happening lately. First, I had a great time participating in Amanda's Diamonds and Pearls charm swap. I can't wait to see what the other participants came up with! With 12 different players, there's sure to be lots of different interpretations of the theme.

Second, I've been eyeing and checking out the charms I received last year during the swaps at Silver Bella. So many creative artists, and all with different interpretations of the same theme. From jars of bella dust, to tiny bits of soldered goodness, to gems and sparkle galore. I still have yet to find a way to display them, so they remain together on a sturdy chain.

After last years Silver Bella event, and after seeing some of the amazing soldering work from other Bellas, I knew that without a doubt I wanted to take soldering classes from the soldering master, Sally Jean Alexander. February came and that goal was accomplished! While the act of soldering may be simple, it's the various techniques that I wanted - and boy did I get them. Her class was everything I wanted to learn and so much more!

So, when talk came around to this years Silver Bella event, I was already in awe with the instructors that had been announced - Jenny Bowlin, Rebecca Sower, Kim Kwan, Carolyn Peeler, Charlotte Lyons, Pam Garrison, and of course, Teresa McFayden too. Imagine my surprise and pure thrill when Teresa announced the end of the Silver Bella instructor lineup that we all learned that Sally Jean Alexander would be joining the Prima Bella's this year. I knew that without a doubt, I was going to do everything I could to be there!

I had the hardest time narrowing down my class selections to 5. Somehow I managed to get that figured out and then the time came to register. There was no way I was moving away from the computer and was going to do everything within my power to get into my top classes. The stars must have been aligned and working in my favor because I did get in, and in the classes I had narrowed down to. I wish I could attend all of the classes as each of the Prima Bellas are amazing artists and their classes look over the moon fabulous.

My OB-GYN has given the okie doke for me to travel, and this will be the last time I travel before our Baby Bean arrives. I am SO looking foward to this fun glittery, sparkly, and creative weekend!
