COOKING: Sausage & Barley Soup

This is a nice healthy soup recipe with a lot of texture and flavor. This can be cooked in a pan on the stove until the barley and carrot are tender, or in a slow cooker. It all depends on how much time you’ve got available. It also freezes brilliantly, for an uber quick meal on the fly.

INGREDIENTS:

  • 1 pound ground turkey or turkey sausage
  • 1/2 cup diced onion
  • 1 tablespoon minced garlic
  • 1/2 teaspoon Italian seasoning
  • 1 (48 fluid ounce) can chicken broth
  • 1 large carrot, sliced
  • 1 (10 ounce) package frozen chopped spinach
  • 1/2 teaspoon crushed red peppers
  • 1/4 cup uncooked pearl barley

INSTRUCTIONS:

In a heavy pot or dutch oven, cook the turkey, onion, and garlic until the sausage is evenly brown. Over medium heat Season with Italian seasoning. Remove from heat, and drain.

Return the mixture to the pot, and add the chicken broth, carrot, spinach, and barley.

Cook until the barley and carrots are tender.

NOTES:

When I made this last, I couldn’t find the barley in the pantry (oh the shame!). So, I added macaroni noodles instead. They were fabulous. (P.S. Fred also slept all night long that night. Coincidence? I think not!)

I often times also add a selection of whatever vegetables are in my fridge to the soup. Depending on the veggie, either add them in with the onions, or just before the barley is tender. Zucchini is my favorite to add.

Cha..Cha..Changes are Coming!

It's long overdue, and because I have great plans (make that ideas) of streamlining my sites, and really bringing them all together, you'll find that lots of old(er) posts are starting to show up here. I'm closing down all of my sites except for www.heatherales.com.

Joyful! Joyful! I am excited - maybe even a bit rejuvenated.

You might even find a movie or e-tutorial coming up. How cool would that be? I have lots of ideas and things I would love to do with my site. Now I need to determine what is realistic for my life, family, and schedule and go from there.

With all of that, I've decided to hire a site designer whose work and skill fits in with my desires and taste. I can't wait to see what we'll have in the end!

COOKING: B.R.A.T. Cookies

I’ve been told that when kids are sick with the “chucks” and “leaks” (don’t you love how I put things?) you should feed them the BRAT (bananas, rice, apple sauce or apple juice and toast) diet with lots of liquids. Now that Fred is running around and wanting to be independent (read that as… not be fed anymore. He has to feed himself) I wanted to find an easy way to try and help him cure the previously mentioned ailments, be relatively healthy (comparatively speaking) and still be tasty. No, there isn’t any toast – but there is flour and most of the other ingredients that go into bread. So, I’m voting that it counts.

Here’s what I came up with. Steve was impressed (not very hard to do), I thought they were tasty but best of all is that Fred thinks he’s a big boy.

Boy are we in for at least 17+ years of fun!

INGREDIENTS:


1 cup all-purpose flour
2 cups whole wheat flour
1 1/2 cups puffed rice cereal
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground nutmeg
2 teaspoons ground cinnamon
3/4 cup shortening
1/2 cup raw sugar
1/2 brown sugar
3 eggs (I used two whites, one whole)
1 cup mashed bananas
1 cup applesauce
Optional: Cinnamon chips or chocolate chips

INSTRUCTIONS:

Preheat oven to 400 degrees F (200 degrees C).

Sift together the flours, rice cereal, baking soda, salt, nutmeg and cinnamon. In a large bowl, cream together the shortening and sugar; beat until light and fluffy. Add egg, banana, applesauce, oatmeal and nuts. Add dry ingredients, mix well and drop by the teaspoon on ungreased cookie sheet.

Bake at 400 degrees F (200 degrees C) for 15 minutes or until edges turn lightly brown. Cool on wire rack. Store in a closed container.

Soldering Workshop - March 2010

Due to popular request, I've added another "Soldering Workshop" date to my calendar! I'm going to host my next "Soldering Workshop" on Saturday, March 27th from 10am - 4pm. It is an "all in one" class - basically a combination of my basic introductory class and my advanced class. After some discussion with previous students, we realized that both classes can be completed within the same day. In the Workshop, we will still cover the same topics and skills that I currently cover in my basic class, but at a much faster pace.

The Soldering Workshop will be held at my home from 10am - 4pm. My home is located in Roanoke, TX (close to both 114 and I35, and Texas Motor Speedway). We'll start out with the introductory soldering class where we will discuss soldering tools, supplies, and the basics of jewelry charm soldering. In this class you will create one (possibly two depending on time) 1.5" charm. All of the tools and supplies you will need are provided in this class. However, you are welcome to bring any custom art you would like to use, should you want to personalize your charms. If you bring art or photos, please make sure that they are laser printed on plain (not photo) paper. Photo paper (matte and glossy) has a plastic coating on it which will melt under the heat of a soldering iron. You will need two images, one for the front and one for the back of your charm.

We'll take a short break (where you're welcome to either eat a lunch/snack you've brought with you or run out and pick something up) and then jump into discussing advanced techniques. In this segment, we'll discuss and I will demonstrate creating bubble charms, working with bevels, shadow box charms, soldering non-glass items, and decorative soldering. Then, we'll work together to create a variety of charms to add to your collection. If you choose to bring art for your charms, please make sure they are printed on laser paper, and are in the following sizes: one sized to 1", one sized to 3/4", one sized to 1-1/2". The supplies and tools are provided for this segment also.

I try to keep the classes small with 6 or less students attending so that everyone is able to receive personal attention and assistance.

Refreshing Myself...

It's the time of year where I find myself thinking about the new year (the one we're currently in), pondering about the one that just ended, and even thinking about past years. There are things that I want to be completely different, things I want to get back to, and things I want to be just as they are.

This is as much of a personal journal as it is a public website. With that in mind, I know that documenting my thoughts will not only help me be accountable, but will help me be mindful of not repeating the negative pieces of my past.

Things I want to be completely different:
  • I need to kick this caffeine thing. I don't drink alcohol, coffee, or tea. Why do I pump my body so full of caffeine and other energy "enhancing" ingredients.
  • I want to be organized. Yes, yes I know. Those of you who know me personally are not shocked and those of you who know me professionally are (I am anally organized at work - don't be too shocked). I want the rest of my house to be as tidy, organized, and labeled as my kitchen pantry.
  • I want to be more financially responsible. I have improved in this area by leaps and bounds over the last few years. However, I still have leaps and bounds to go.
  • I want to make a more concentrated effort to keep in touch and build relationships with my family. I have such an unusual, yet lovely, stretched out family tree. I harbor a fair amount of guilt for not tending to and helping those relationships grow.
  • I want to get to know my neighbors. I don't know a fig about them - all I know is that some have kids, some are loud, some are quiet, some of crazy lawn art, some don't, and some of them park in front of my house so that our guests can't. Sad, but true! I don't know a fig about them - the real them.
Things I want to get back to:
  • I want to get back into my pre-pregnancy clothes. I'm putting them into storage bins and giving myself until the end of July to get back into them. If I'm not - out they go.
  • I want to get back into being fit - focused on my health, being active, working out, making wise fit decisions.
  • I want - no NEED - to get back into eating healthy foods for myself. Garbage In = Garbage In. There is nothing good that comes from eating crap.
  • I need to make healthier food choices for my family too. Children learn by example - and I have not been setting a great one. I want to make a better, more direct planned effort, in our family meals rather than relying on local restaurants or quick fix meals. By focusing my efforts towards planned healthy meals, we'll eat less of the garbage that is quickly available in most pantry's.
  • I want to get back into being creative - finding little pockets of time in my day to be creative. Since "retiring" from the paper crafting industry as a designer, I've put aside most of my creative endeavors and miss it more than I imagined.
Things I want to be just as they are:
  • I want my husband to always know what an amazing man I think he is.
  • I want our family (mine and Steve's) to always know that our home is and will always be open.
  • I want my wonderful, beautiful, delightful son to always know how much I love him.
  • I want my family to know how much I love and appreciate them and the efforts they go to on my (and my family's) behalf.
  • I want to be continually inspired by life, friends, love, and the oodles of blogs on my google reader.

Since this post is just for me, I'm turning the comments off. :)
